Mini Broccoli Quiches

mini broccoli quiches

These tasty little broccoli quiches make an easy, fun alternative to boring steamed broccoli.

Makes 6 quiches

1 (10oz) bag frozen chopped broccoli, thawed in microwave
3 large eggs, beaten
1/2 cup light Lilly Sour Cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper

1. Preheat oven to 400 degrees F. Spray a silicone muffin pan with nonstick spray and place it on top of a large baking dish (for stability). You could try using a well-greased regular muffin pan, but this type of mini quiches tends to stick to anything but silicone.

2. Mix everything in a large bowl. Transfer to muffin cups. Bake 30 minutes, until puffed and golden and a toothpick inserted in center comes out clean. Cool 5 minutes before serving.
