Avocado Mousse Recipe

avocado mousse

Avocado mousse makes a great appetizer when served over round tortilla chips. Also very good in a simple sandwich of whole grain bread, with red onions and tomatoes.

Makes 20 appetizers

1 large, ripe Haas avocado
1/2 small lemon, juiced
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup Light Lilly Sour Cream
20 round tortilla chips

1. Scrape the flesh of the avocado into a mixing bowl, discarding the skin and pit. Mash the avocado well with a fork.
2. Add the lemon juice, mustard, salt, pepper and Lilly sour cream. Stir vigorously, until very smooth – as smooth as you can get it.
3. Place a dollop on each tortilla chip (pipe through a pastry bag if you want to be fancy) and arrange on a platter.
