Olive balls – a delicious baked appetizer. You make these in advance and chill them before baking, which makes them ideal for entertaining.

Makes 12

1 cup grated sharp cheddar cheese
2 tablespoons unsalted butter, softened
2 tablespoons Light Lilly Sour Cream
1 large egg, lightly beaten
2/3 cup all-purpose flour
1/4 teaspoon cayenne pepper
12 large stuffed olives, drained and patted dry

1. In a medium bowl, combine all ingredients. Use floured hands to form into dough. Divide into 12 dough balls, each weighing about 20 grams. Using floured hands on a floured surface, wrap each piece of dough around an olive.

2. Place wrapped olives on a baking sheet lined with parchment paper. Refrigerate for an hour.

3. Heat oven to 400 degrees F. Bake the olive balls 10-15 minutes or until lightly golden. Serve warm.
