Sour Cream Mashed Carrots Recipe

Mashed carrots – a delicious, healthy change from mashed potatoes.

Makes 4 servings

8 large carrots (1 1/4 pounds total weight)
2 tablespoons unsalted butter
1/4 cup light Lilly Sour Cream
1 teaspoon kosher salt
1/4 teaspoon black pepper

1. Take sour cream and butter out of the fridge to bring them to room temperature.

2. Bring a large pot of water to a boil. Meanwhile, halve carrots crosswise, then halve the bigger half lengthwise, to achieve fairly equal pieces.

3. Add carrots to boiling water. Cook, uncovered, over high heat, until very tender, about 30 minutes.

4. Strain carrots. Transfer to food processor bowl. Add butter, Lilly Sour Cream, salt and pepper. Process until very smooth, about 1 minute, stopping once to scrape sides of bowl with a spatula.
