Broiled Salmon with Sour Cream Dill Sauce

Makes 4 servings

Olive oil cooking spray
4 (6oz) atlantic salmon fillets, 1-inch thick
1 tablespoon fresh lemon juice
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 teaspoon minced garlic

Sour Cream Dill Sauce:
1/3 cup Lilly sour cream
1/3 cup mayonnaise
1 teaspoon minced garlic
1 teaspoon fresh lemon juice
1 teaspoon horseradish
1/2 teaspoon dill weed
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

1. Preheat oven to 400 degrees F. Place rack in the middle of the oven. Line a broiler-safe baking dish with foil and spray with olive oil cooking spray.

2. Place salmon fillets in the baking dish, skin side down. Squirt lemon juice on top. Sprinkle with salt and pepper, and evenly scatter garlic on top. Lightly spray with olive oil spray.

3. Turn off the oven and switch to broil. Set on high (450 degrees F). When broiler is hot, place baking dish in the middle of the oven. Broil the salmon for about 8 minutes, or until opaque and cooked through.

4. While salmon is broiling, whisk together the sauce ingredients until smooth.

5. Transfer the salmon to individual plates. Spoon the sauce on top. Serve immediately.
