Fresh Cucumber Salad with Sour Cream Dill Dressing

A simple, refreshing salad, perfect for summer al fresco dining.

Makes 4 servings

1/2 cup Lilly sour cream
Juice from 1 lemon
2 tablespoons chopped fresh dill
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 pound firm cucumbers, unpeeled, thinly sliced

In a medium bowl, whisk together Lilly Sour Cream, lemon juice, dill, salt and pepper. Add the cucumber slices and toss to coat. Serve immediately, or refrigerate for 1-2 hours before serving.
