Delicate, tasty crepes, flavored with sour cream and honey. The taste is incredible, and I like that this filling is not as overpowering as, say, chocolate or Nutella, so you can still taste the crepes.

Makes 18 crepes

2 cups white whole-wheat flour
1/4 teaspoon salt
1 teaspoon sugar
3 large eggs
1 cup milk
2 cups water
1 tablespoon melted butter
Nonstick cooking spray
1/2 cup Lilly Sour Cream
1/4 cup honey

1. Whisk together the flour, salt and sugar.In another bowl, beat the eggs. Add the milk, water, and melted butter. Gradually add the flour mixture to the egg mixture, whisking until smooth. Allow to rest in fridge, covered, for 1 hour.

2. Heat a 10-inch nonstick skillet over medium heat. Spray with nonstick spray. Pour 1/4 cup batter per crepe, swirling to spread evenly. Cook 2-3 minutes on each side. Spread each crepe with sour cream and drizzle with honey, then fold in half, then again in half. Serve immediately.
