Creamy Tomato Soup

A thick, creamy, richly flavored tomato soup. The perfect winter lunch or dinner!

Makes 6 servings

3 (15oz) cans diced tomatoes
1 (8oz) can tomato paste
1/2 cup chopped onion
1 tablespoon minced garlic
2 cups chicken stock
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 teaspoon kosher salt
1 bay leaf
1 cup Lilly Sour Cream

1. Remove sour cream from fridge to allow it to get to room temperature.

2. Place all the ingredients except the sour cream in a large stockpot. Bring to a boil, then lower to medium-low and simmer, partially covered, 20 minutes.

3. Puree in batches in food processor.

4. Return to the pot and stir in the sour cream. Cook over very low heat just until heated through, about 2 minutes.
