Spicy Chorizo Omelet

Spicy Omelet
Dad will love this spicy omelet – the perfect Father’s Day breakfast!

Makes 1 serving

2 oz Spanish chorizo sausage
1 tablespoon olive oil
3 large eggs
2 tablespoons LILLY Sour Cream
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
Pinch red pepper flakes
2 tablespoons chopped cilantro

1. Cut the chorizo sausage into 1/4-inch thick slices. In an 8-inch nonstick skillet, heat the olive oil over medium heat. Add the chorizo slices and brown on both sides.

2. Meanwhile, in a small bowl, whisk together the eggs, LILLY Sour Cream, salt, pepper, red pepper flakes and cilantro.

3. Pour the egg mixture on top of the chorizo slices. When bottom of omelet is browned, carefully fold it in half, then flip. When cooked in center, slide onto a plate and serve.
